Abstract

An intense process of modernization marks the second half of the nineteenth century in the city of Rio de Janeiro. In this context, the search for the public space as a place of social experience and appreciation of leisure activities began to be better conformed, including the growth and diversification of the entertainment market, especially theaters, circuses, dances, sports practices and a public food structure, which was also related to the new urban configuration, such as confectioneries. These, in general, had functions beyond the simple preparation and sale of sweets, acting as well as a bakery and warehouse. We believe that most customers were members of higher social strata or of the ascending middle classes. However, customers with lower purchasing power could have attended these spaces as well. Visiting confectioneries could be interpreted as a representation of modern habits, evolved and refined, suited to a country and a city that sought progress. Thus, this study aims to profile the confectionery in Rio de Janeiro in the 19th century (1854-1890), using the newspapers published in the city during the period as sources.

    Doutora em História Comparada pela Universidade Federal do Rio de Janeiro - UFRJ (2017); Mestre em Hospitalidade pela Universidade Anhembi Morumbi (2009); Especialista em Padrões Gastronômicos pela Universidade Anhembi Morumbi (2006); Graduada em Gastronomia pela Faculdade Novo Milênio (2004). Professora Adjunta do Curso de Gastronomia do Instituto de Nutrição Josué de Castro (INJC) da Universidade Federal do Rio de Janeiro - UFRJ. É membro do Sport - Laboratório de História do Esporte e do Lazer. Trabalha com Projetos de Pesquisa e Extensão na UFRJ. Tem experiência didática, profissional e publicações nas áreas de Gastronomia, atuando principalmente nos seguintes temas: História da Gastronomia, Culinária Brasileira, Hospitalidade e Comensalidade.
