Some contaminants of chickens’ carcasses were studied, as well asthe behaviour of the flora when some modifications were introduced in the industrial line. With this purpose, the incidence of fluorescent Pseudomonas, conforms, enterococcus and total aerobics, were measured since the phase of evisceration until packaging, in three different periods of work. It was possible to compare the technological sequence usually employed in the slaughterhouse (evisceration/shower/chilling/packaging), with other sequences (evisceration/ chilling / packaging ; evisceration / chilling / shower / packaging ; evisceration / shower / chilling/shower/packaging), to study the efficiency of each one in reducing the microbial load of the treated carcasses.
