Abstract

During the summer of 1977, then- was realized a research with the purpose to evaluate quantitatively the bacteries belonging to the microbiological groups of major importance in revealing. The higienic-san sanitary quality of same types of milks distributed in São Paulo city. The were determined the content in aerobic mescphill, termophill and psicrophill; enterococcus; coliform; fungus and yeast and Pseudomonas. There were contrasted five marks from each type and the conclusions were: a) flagant variation in the microbiological properties; b) disagreement of the regulamentar standard; c) benevolence of the legislation relatively to mesophill/psicrophill; d) to indicate the fungus and yeast as higienic parameter to pasteurized milk; e) eficacy of enterococcus as indicator of fecal polution, for processed milks; mainly when they are stored; f) the adoption of quantitative examination of total coliforms substituting its test of presence.
