Abstract

This text presents sustainable diets, food systems, and their relationship with health and nutrition. A quality diet eliminates hunger, is safe, reduces all forms of malnutrition, promotes health, and is produced sustainably, that is, without harming the environment and guaranteeing high-quality diets for future generations as well. It is not possible to have a healthy diet without it being sustainable in all its dimensions. However, today’s global food system is not sustainable, and, at the same time, the world is facing the global union of obesity, malnutrition, and climate change. To overcome the challenges, it will be necessary to look at production systems, supply chain activities, food environments, food consumption, and consumer behavior, involving multiple actors.
